Dry Ginger (Sonth) and Turmeric (Haldi)

Two things from every Indian kitchen, used here in their dried form. The distinction matters: Ayurveda treats dry ginger and fresh ginger as different medicines with different actions.

Botanical name
Zingiber officinale and Curcuma longa
Sanskrit / Hindi
सोंठ, हल्दी
Part used
Dried rhizome of both
Known compounds
Gingerols and shogaols (Sonth), Curcuminoids including curcumin (Haldi), Volatile oils

Why dried ginger rather than fresh

Fresh ginger is Ardraka. Dried ginger is Sonth, and classical Ayurveda considers it the warmer, more penetrating of the two, which is why preparations aimed at stiffness and cold-type pain specify the dried rhizome.

Drying changes the chemistry as well as the classification. Some of the gingerols convert to shogaols, which is why dry ginger tastes and acts differently from fresh.

Turmeric beyond the kitchen

Curcuma longa is a rhizome in the ginger family. Curcuminoids are its best-known compounds and among the most researched plant constituents anywhere, with a large literature on inflammatory pathways.

In Ayurveda haldi is used both internally and externally, and external turmeric applications for swellings and sprains are a long-standing household practice across India.

Their role in the blend

Both contribute to the warming side of a pain oil, along with camphor, ajwain and mustard. That warm sensation is the part users notice first and the reason these oils suit cold weather and early mornings.

Questions about Sonth and Haldi

What is Sonth?

+

Sonth is dried ginger rhizome. Ayurveda treats it as distinct from fresh ginger, considering it warmer and more penetrating.

Does turmeric in an oil stain the skin?

+

In a blended massage oil the proportion is small enough that staining is not usually an issue. Raw turmeric paste is a different matter.

What are curcuminoids?

+

They are the yellow pigment compounds in turmeric, the best known being curcumin. They are the focus of most research on the plant.
